Chocolate Chip Banana Nut Loaf

First recipe from the box, thanks to my daughter Vivienne and the bunch of overripe bananas chilling on my counter. There’s no author listed on the card, but I’m pretty sure it’s Aunt Deb’s tried and true banana bread recipe. The steps are easy enough, and since I’ve whipped up banana bread like a million times, I’m feeling good about nailing this one!

First up, gather the ingredients (ignore the mild mess in the background):

Recipe says to mix the dry ingredients, easy enough.

It wasn’t clear if the butter was meant to be mixed with the dry or liquid ingredients, but since it said softened and not melted, I rubbed it in to the dry ingredients similar to what I would do with a scone or another type of pastry.

Next up, mixing in the liquids- the milk, eggs, and vanilla.

Lastly, folding in the chocolate chips, nuts, and mashed bananas. Yes, the recipe called for mini chips, but I didn’t find mine until after this was in the oven (maybe it is time to clean out the pantry!).

All mixed and ready to be baked! I ended up with one big and one small loaf.

Into the oven at 350° and bake for an hour. The small one took just under and hour, and the big one took more like an hour and ten minutes.

Out of the oven, time to take a deep breath and cool down before taking them out of the tin.

And done! This was a nice basic banana bread, and it was a hit with Vivi!

Ingredients

  • 2 cups flour
  • 1 1/4 cups sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 stick of butter or margarine, softened
  • 1 egg
  • 1 1/2 cups milk
  • 1 teaspoon vanilla
  • 3 ripe bananas, mashed
  • 1 cup mini chocolate chips
  • 1 cup chopped nuts

Directions

  1. Preheat oven to 350° and grease desired tins
  2. Mix dry ingredients (flour, sugar, baking soda, baking powder, salt)
  3. Cut in the butter
  4. Add wet ingredients (milk, egg, vanilla)
  5. Fold in bananas, chocolate chips, and nuts
  6. Bake for about 1 hour- dependent on size of loaves

Notes

Nuts are optional, yield 1 large loaf or 2 small loaves.
