Was looking for a simple week night meal, and decided this fit the bill. Who doesn’t like lemon chicken?
First step, assemble the ingredients. Ignore the second stick of butter, I can’t count.

First chop the onion and Sautee it in a pan with the butter and some salt and pepper.

While that is getting started, pound the chicken flat. Great for taking out any stress.

Now I went off the recipe card… instead of just poaching the chicken in the lemon juice, I browned it a little first for extra flavor.

Then added the lemon juice, wine, and garlic and poached until done, which was somewhere in the neighborhood of 10 minutes I think.

Finally serve! We went the lazy route and paired it with with frozen peas and air fried potatoes. Not a glamorous meal, but a tasty one.

Ingredients
- 4 chicken breasts, halved
- 1/2 onion
- 1/2 stick butter
- 2 lemons, juiced
- 1 clove of garlic
- 1/2 cup white wine
Directions
- Cut the onion and sauté in a pan with the butter and salt/pepper to taste
- Pound the chicken flat
- Add the chicken to the pan and brown
- Add the lemon juice, wine, and garlic and poach until cooked through
Notes
I didn’t do this, but it would probably be good to reduce the sauce down a bit after the chicken is done. White wine can be substituted with chicken broth if needed.
