Cowboy Spaghetti

Once again I was looking for a quick weeknight meal, and this fit the bill. It was far more delicious than I expected, and reminded us a bit of Skyline Chili, which is already a big hit in our household. This certainly won’t replace the typical Italian red sauce pasta meal, but it was nice to change it up and hit a different flavor profile. I also learned a new New Jersey term that I had to google… apparently “chop meat” just means ground beef!

First step is to get the bacon crispy, then remove and put on a plate with some paper towel to drain.

Next, brown the ground beef and add onion, garlic, hot sauce, black pepper, and Worcestershire sauce.

Once it is browned, deglaze with beer and cook 5-6 minutes. I used a random IPA that I had in the fridge, probably anything would work that isn’t too fruity or sour.

Stir in the tomato sauce and tomatoes.

Serve over cooked spaghetti and top with cheddar cheese, scallions, and bacon.

Ingredients

  • 1, 8oz package shredded cheddar cheese
  • 1 can beer
  • 3 slices bacon cut up small
  • 1 medium onion chopped
  • 1lb chop meat (aka ground beef) or ground turkey
  • 1, 14oz can crushed tomatoes
  • 1, 8oz can tomato sauce
  • 1lb spaghetti
  • 3-4 cloves of garlic
  • 1 Tbs hot sauce
  • 1 Tbs Worcestershire sauce
  • 4-5 scallions, chopped

Directions

  1. Brown the bacon and remove to a paper towel lined plate when crisp.
  2. Cook the ground beef, add onion, garlic, pepper, hot sauce, and Worcestershire sauce and cook until browned.
  3. Add beer to deglaze and cook 5-6 minutes.
  4. Stir in tomato sauce and crushed tomatoes.
  5. Add cooked spaghetti.
  6. Serve with cheddar cheese, scallions, and bacon on top.
