From Aunt Deb’s recipe box

I love amaretto, so I was super excited to try this recipe. The Amaretto flavor was amazing with the stuffing, and the whole family loved this recipe.
Right off the bat I screwed up the recipe, since I bought boneless skinless breasts instead of bone in, but everything still turned out great. The instructions call for cutting a slit along the bone, but I just cut a pocket into each breast.

Next, brown the sausage meat in a skillet along with the onion and garlic.

Mix the stuffing, 1/4c amaretto, egg, and “spices” (I read the recipe like 10 times looking for the spices…. just salt and pepper lmao) in a bowl, and add the sausage mixture.

This is where the recipe got confusing, it said to stuff each breast with 1/4 of the mixture but there are only two chicken breasts? I wouldn’t even know how to cut them in half if they had bones. I just stuffed mine as full as I could get them and sprinkled the rest of the stuffing around them in the pan. Next, dust the breasts with flour and brown, skin side down first if you have better reading comprehension skills than me.

Once they are seared, top with butter and the rest of the amaretto and bake at 325 degrees until done, basting frequently. The recipe says this should take 20-25 minutes, but this can vary based on the size of your chicken breasts and whether or not they have bones, so pay attention to temperature over time!

We served it with garlic noodles, but it would also go well with potatoes and/or vegetables on the side.

Ingredients
- 2 split chicken breasts
- 1/2 lb sweet Italian sausage
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2c dry stuffing mix
- 1/2c amaretto
- 1 egg
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbs flour
- 1/4 cup oil
- 4 Tbs butter
Directions
- Preheat oven to 325 degrees
- Cut a pocket in each 1/2 breast- slitting along bone
- Brown sausage meat, onions, and garlic in skillet
- Combine meat with stuffing, 1/4c amaretto, egg, and salt/pepper
- Stuff each breast with 1/4 of mixture and dust with flour
- Brown chicken skin side down in hot oil, turn chicken carefully
- Put in pan (or just use an oven proof skillet) and top with butter and the remaining amaretto
- Bake until the chicken is cooked through, basting frequently

Serve with pasta or potato and veg.
