Here we go, another Jello atrocity! Spoiler alert though, once again it was better than I thought it would be.
Earlier in the summer we picked too many strawberries, so I chose this recipe to use up some of the strawberries I had stuck in the freezer. Between Cyclospora and the Driscoll strawberry drama that happened earlier in the year we have been trying to use local produce as much as possible!

To make the Jello horror, first dissolve the Jello in a cup of boiling water. The store didn’t have strawberry Jello so I used a pack of cherry and a pack of raspberry… I figured a mix of red artificial fruit flavor would be close enough!

Next, add 20 oz of frozen strawberries, one drained 1lb can of crushed pineapple, 3 mashed ripe bananas, and optional chopped walnuts. Yum.

Pour half of the mixture into a mold, and stick it in the refrigerator until it is firm. This didn’t take super long since the frozen fruit already had things starting to set a little, maybe an hour.

Next, the true horrors begin. Spread a pint of sour cream over the set Jello in the mold.

Then put the rest of the Jello Mixture on top and refrigerate until set.

To unmold, I filled a big bowl with hot water, and dipped the pan into it. I definitely held it in for too long because the outside layer of Jello started to liquefy again, so be quicker than you would think.
I forgot to take a plated slice picture, but my daughter liked it so much she wanted seconds! The sour cream was a good complement to the sweetness of everything else, and the amount of fruit inside made this feel moderately healthy. Would I make this again? Maybe not, but did it taste good? Yes!

Ingredients
- 2 (3oz) packets strawberry Jello
- 1 cup boiling water
- 2 (10oz) frozen strawberries
- 1lb can crushed pineapple, drained
- 3 mashed ripe bananas
- 1 pint sour cream
- chopped walnuts (optional)
Directions
- Dissolve Jello in boiling water
- Add all remaining ingredients except sour cream
- Pour 1/2 of mixture into a mold, and chill until firm
- Spread sour cream on refrigerated half when set
- Pour the other half of the Jello mixture on top, and refrigerate until set
Notes
I do actually really like Jello, but Jello “salads” feel weird, despite me being proven wrong twice now!
