From Aunt Deb’s recipe box


I apologize to all French chefs for this one. Google tells me that “Chicken Supreme” is chicken with a creamy mushroom sauce that is a riff on a velouté sauce. That is not what this recipe is, but I will say that this was really good, and both easier and healthier than the real deal. This is just one of many simple chicken breast recipes in the box, and it did not dissapoint.
First, plop the chicken breasts in a baking dish, pour some wine on top, and sprinkle with salt, pepper, and a bit of nutmeg.

Top with some sliced mushrooms. To make this even easier and make less dishes dirty, I bought pre sliced mushrooms.

Next, put stuffing mix and parmesan cheese in a bowl and mix together.

Sprinkle this on top of the mushrooms, and bake in the oven. That’s it! Apologies for the state of my oven glass.

For flavor and browning, I did add a couple of tablespoons of butter cut into pads on top of the stuffing mix.
The recipe says to bake at 375 for 25-30 minutes, and I don’t know if it was just the size of my chicken breasts, but mine took closer to 40 minutes to cook through. As always, use a thermometer to check, chicken should be cooked to 165 degrees (or pull at 155 and let rest).
Although it wasn’t as luxurious as real chicken supreme sounds, this was a really good weeknight dish, and it left me with next to no dishes.

Ingredients
- 2 Boneless chicken breasts
- 1/2 cup dry white wine
- salt and pepper
- pinch of nutmeg
- 2 cups sliced mushrooms
- 6 tablespoons parmesan cheese
- 6 tablespoons herbed seasoned stuffing mix
Directions
- Put breasts in pan and add wine, salt, pepper, and nutmeg.
- Put sliced mushrooms on top
- Mix the crumbs with the cheese, and sprinkle on top of the mushrooms
- Bake at 375 degrees 30-40 minutes or until chicken is cooked through.
Notes
For extra flavor add pats of butter on the crumbs before baking.
