Oatmeal Chocolate Chip Bars

This recipe is credited to Jeannie Lake, who I assume was one of Mimi’s friends. I needed a dessert to make for a barbeque, and you can’t go wrong with bars or chocolate chip anything!

First step is to sift together the flour, baking powder, salt, and sugars. I am far to lazy to sift anything, so I just dumped it in a bowl and whisked it.

Next add the oil, eggs, water, and vanilla, and beat together 1 minute (or mix until well combined).

Add the chocolate chips and mix well (and the recipe card omitted the oats, but I added them at this step).

Spread the batter on a greased cookie sheet. This worked out best using oiled hands as well to press down so it didn’t stick to everything.

Bake at 375 degrees for 20-25 minutes, and cut into squares while still hot. I used a pizza cutter for this, and got 24 generously sized bars.

Store in a covered container, and the recipe suggests putting a slice of bread in too to keep them from drying out and becoming crisp.

Ingredients

  • 2 cups flour
  • 2.5 tsp baking powder
  • 2 tsp salt
  • 1 1/3 cups brown sugar
  • 1 1/3 cups granulated sugar
  • 2/3 cups oil
  • 2 eggs
  • 3.5 tsp water
  • 2 tsp vanilla
  • 6-8oz chocolate chips
  • 2 cups oatmeal (uncooked)

Directions

  1. Preheat oven to 375 degrees.
  2. Sift flour, baking powder, salt, and both sugars together.
  3. Add oil, eggs, water, and vanilla, and beat for 1 minute.
  4. Add chocolate and oats and mix well.
  5. Spread batter onto a greased cookie sheet.
  6. Bake for 20-25 minutes, and cut into squares while still hot.

Notes

Feel free to substitute chocolate chips for chocolate chunks, raisins, butterscotch chips, or anything else you can think of!
